lavash

Thin, soft wheat flatbread, common across the Caucasus and Iran.

Lavash is sold in Middle Eastern, Turkish and Russian grocery shops and increasingly in larger supermarkets. The closest stand-in is a large, thin wheat tortilla of the kind sold for wraps.

Substitute:

Large wheat tortillas work in a similar way, but they are slightly thicker, softer and richer and will not crisp up as much in the oven. Yufka is not suitable, since it is raw dough rather than a finished bread.
