summer savory

Dried herb with small, narrow leaves, savoury and peppery, somewhere between thyme and oregano; known in Georgia as kondari and one of its most important herbs.

In English-speaking countries dried summer savory is rarely on supermarket shelves, but spice shops, Eastern European grocers and online spice sellers usually carry it. Georgian or Eastern European shops often stock it under the name kondari.

Substitute:

Winter savory comes closest but is harsher and more resinous, so use a little less. Dried thyme with a pinch of marjoram or oregano also works, though it lacks the peppery bite.
