Savory

A herb with small, narrow leaves, peppery, sharp and thyme-like; in Georgian cooking, where it is called kondari, it is one of the most important herbs.

Dried savory is found in well-stocked supermarkets or spice shops and online, fresh savory occasionally at farmers' markets or as a potted plant; Georgian recipes usually mean summer savory, which is milder than winter savory.

Substitute:

Thyme with a little marjoram comes closest, though it lacks the slightly peppery bite that sets savory apart from both.
