Chicken in a cold walnut sauce with garlic, spices and pomegranate
2 h·6 servings
Pomegranate juice boiled down to a syrup, dark, thick and distinctly tart with a fruity sweetness.
This means the tart, boiled-down pomegranate juice, often sold as pomegranate molasses or nar ekşisi, not the sweet red grenadine used in drinks, which is easily confused with it. It is sold in Turkish and Middle Eastern grocers, delicatessens and online.
Unsweetened pomegranate juice slowly reduced to a syrup at home comes closest to the original. Lemon juice with a little honey gives the acidity but not the dark, fruity depth, and grenadine is too sweet and does not work.
